Evaluation of Food Consumption and Physical Activity Patterns and Indicators for Risks for Obesity in Preschool Children:
The main objectives in this three years study in a cohort of preschool children along with their parents are to: 1) determine food consumption, choices and nutrient intake patterns; evaluate plate waste and nutrient intake from meals provided in school and at home; 2) ascertain anthropometric measurements to obtain body mass index, fat free body mass and ratios of waist to hip and waist to thigh circumference as indicators of obesity; and 3) monitor physical activity and assess the home environment.

Through this Food Safety research initiative, microbial safety of fresh produce, especially from small and minority producers in KY are surveyed and assess the level of compliance with the Good Agricultural Practices (GAP) by the farmers. Train farmers in the latest modifications to the Food Safety Modernization Act (FSMA) implemented by the Food & Drug Administration (FDA), especially in record keeping of all the activities recommended by the GAP.
